Sugar-free Vasilopita

Vasilopita

  • 4 medium-sized eggs
  • 50g stevia
  • 200g flour for all uses
  • 1 tbsp. baking powder
  • 1 pinch of salt
  • zest of 1 orange
  • 60g dried cranberries
  • 60g chopped walnuts
  • 50g milk
  • 150g olive oil
  • orange juice from 1/4 of an orange
  • 150g cold sour cream

Execution:

  1. Let the oven preheat to 170oC in air mode.
  2. Lightly grease and flour a round 23 cm mold.
  3. Inside the mixer, put the whisk at high speed and mix the eggs with stevia for 5 minutes, until they become fluffy and homogenized with the stevia.
  4. Inside a bowl, mix the flour, baking powder, salt, zest, cranberries and nuts together.
  5. Inside another bowl, mix the milk, olive oil and orange juice.
  6. Slow down on the mixer’s speed and slowly start adding the liquified ingredients that we have in the bowl.
  7. For the final step, add the solid ingredients and mix them until they are all homogenized.
  8. Pour the mixture into the mold and bake it for 50 minutes.
  9. Remove it from the oven and let it cool completely on a grill.
  10. When the pie cools down, put the cream inside the mixer bowl and mix until it becomes whipped.
  11. With the help of a spatula, spread the whipped cream on top of the pie.
  12. Decorate with gold dust and tree branches.
